Pineapple Beef Skewers

Yes! Finally back online…

Finals last quarter, spring break, and the start of spring quarter kept me busy, but I’m back in the kitchen (:

I don’t know whether I should call these pineapple beef skewers or teriyaki beef skewers? It’s not quite teriyaki sauce…I’ll go with pineapple beef skewers. Ha!

What you’ll need:

2 lbs. beef (I used tri-tip)
1 bell pepper (I used orange since it’s sweeter)
2-3 cups cut pineapple
1/4 cup soy sauce
2 tablespoons honey
1 tablespoon sesame oil
bamboo sticks (or metal skewers for outdoor grilling)

1) Trim any fat and cut beef into 1-inch squares. As for the thickness, I kept my squares 1/2 inch thick so they would cook faster. (The beef, pineapple, and bell pepper should all be close in size and thickness so it cooks evenly.)

2) In a large bowl mix soy sauce, sesame oil, and honey. Add MEAT ONLY and mix so it marinates evenly. Put plastic wrap over the bowl and let the meat sit in the fridge for 15 minutes.

3) If using a fresh pineapple go ahead and core it and cut it to desired shape. I did triangles, you can do squares. You can also use store bought, already cut pineapple.

4) Cut bell pepper into 1-inch squares

5) Be careful with the skewers because sometimes they have splinters. Also, the bell peppers are tricky because it’s crispy. It’s okay if some of them are barely hanging on. Alternate between meat, pineapple, and bell pepper on the skewer.

6) I have an indoor grilling pan so it came in handy, but these can definitely be grilled on an outdoor bbq. Cook both sides 2-3 minutes or until you see grill marks; longer if your meat pieces are thicker. Pepper liberally while grilling! I love pepper.
