Mango Chicken Salad

The mangos in the fridge were sort of going bad so to save them I put them in a salad.

Chopped greens (any kind), sliced radishes, minced garlic, mangos, and chicken.
I cut my chicken into strips and just threw them into the pan with olive oil and pepper, nothing fancy.
For my dressing I squeezed half a lemon and drizzled olive oil and balsamic vinegar.

Unnecessary Brunch

Why am I surprised? I’m in LA, Miracle Mile. It was my first time to Mixt Greens and we ordered a salad which was 19 dollars (because of extra ingredients added) and a sandwich for 10 dollars. Plus, I indulged in cookies which were 2 something each and I got 3! I devoured my sandwich…so I guess it was worth the money? Or I was really hungry so it didn’t matter what I ate.

I know, I know, I’ve fallen off the wagon for a bit. I can’t promise that I’ll blog everyday, but I will try to as often as I can…

I’ve noticed lately that cauliflower crust pizza has become popular, so I decided to give it a go. Here’s the link to the recipe I followed http://www.eat-drink-smile.com/2011/04/cauliflower-crust-pizza.html

I didn’t follow so well with the measurements because A) I’m korean and I LOVE garlic, B) I’m not in my own kitchen so I’m missing necessary utensils, and C) I eyeball everything anyways.

I originally wanted to make a BBQ Chicken topping but was lacking some of the ingredients so I settled for onion, bell peppers, and cilantro. It was SO delicious. I don’t think the topping would have mattered because the crust was so good. I highly recommend. Give it a go ya’ll!

P.S. I made an asian style slaw to go with my pizza. Just cabbage and sliced apple dressed in lemon, vinegar, and sesame oil.

Back to Reality

So spring quarter has started! I really thought I would have had a lot of time to cook during spring break, but as it turned out I enjoyed the laziness a little too much. I still have NOT gone grocery shopping so I don’t expect to start cooking anything until later in the week or maybe not even until the weekend.

I made one meal over break, for my brother (:
Alfalfa salad on a bed of tomato and cucumbers with kiwi vinaigrette and ginger soy salmon over sautéed  onions and kale

Busy Busy

Sorry for the lack of posts! Or lack of cooking. We haven’t gone grocery shopping yet and our fridge/pantry is literally, no joke, empty.

More importantly, finals start tomorrow so I’ve been buried in my studies.

After finals = spring break = lots of time = lots of cooking!

Lazy Sunday

I can’t help but be lazy on sundays, especially when I know I have a lot of stuff to do. Finals are just around the corner and I can’t believe how time flies. Anyways, my roommate and I tagged along with the boys to go to the “park”, but ended up at the local high school down the street. Luckily we found a patch of grass to frolic on.
